Peanut Carrots recipe

A simple carrot salad bursting with savory flavors. Julienned carrots and minced peanuts are tossed in a warm butter sauce and served piping hot. The tender carrots, crunchy peanuts, and creamy butter sauce make this simple salad dish an instant hit, whether it's served as picnic dish or formal dinner side dish.

Ingredients List:

2 c. carrots, julienned
½ c. water
¼ tsp salt
2 Tbsp salted peanuts, finely chopped
1 tsp butter
2 tsp sugar
Pepper, to taste

Directions:

1. In a large saucepan bring carrots, water and salt to a boil. Reduce heat, cover, and simmer for 10 minutes until tender-crisp. Drain, and set aside.

2. In small saucepan melt butter. Whisk in sugar and pepper and bring to a boil. Whisk in peanuts. Add to carrots and toss to coat. Serve hot.
