Carrots with Dried Cherries recipe

A simple carrot salad perfect for the late days of summer. This healthy and hearty dish combines crispy carrots, sweet honey, and tart dried cherries in a delightfully simple salad bursting with the natural flavors of summer. Make ahead of time and serve hot or cold along any meal for a tasty and simple treat.

Ingredients List:

5 carrots, sliced
2 Tbsp butter
1 ½ Tbsp honey
¼ c. dried cherries

Directions:

1. Bring 1 inch of water in a medium saucepan to a boil. Add carrots, and cook until just tender but still crisp, approximately 10 minutes. Drain, and set aside.

2. In the same pan, melt butter over medium heat. Stir in honey until dissolved. Add cherries and simmer over low heat for 1 minute until slightly thickened.

3. Remove from heat. In large bowl combine carrots and honey mixture. Toss to combine. Serve hot.
