Carrot Apple Salad recipe

A simple cold salad that makes any picnic or dinner a tasty event. Shredded carrots are tossed with pineapple, apples, and raisins, and served in a creamy yogurt sauce for a simple cold salad that is bursting with flavors. Sweet apples, crunchy carrots, and crushed pineapple make this zesty, chilled salad a perfect treat any time.

Ingredients List:

1 (8 oz) can unsweetened crushed pineapple
2 apples, peeled, cored and diced
3 c. shredded carrots
3 Tbsp raisins
3 Tbsp flaked coconut
1/3 c. vanilla yogurt
1/3 c. plain yogurt
3 Tbsp mayonnaise
1 Tbsp lemon juice

Directions:

1. Drain pineapple, reserving juice in a large bowl. Combine pineapple juice and apples, and toss to coat. Let stand 5 minutes, and drain.

2. In large bowl combine pineapple, carrots, raisins, coconut and apples.

3. In small bowl combine yogurts, mayonnaise and lemon juice. Pour over carrot mixture, and toss to coat. Cover, and refrigerate for 3-4 hours or until chilled. Serve cold.
